We took an old favourite, Shining Cliff Spiced Gin, and barrel-aged it in a charred, oak ex-bourbon cask to impart a stunning flavour to create our Shining Cliff Winter Gin.
Just in time for Christmas, we’ve come up with a stunning new gin that is set to be a favourite to savour by the fireside for many this coming festive season. We brought the gin and the whisky worlds together to produce our new Shining Cliff Winter Gin, and it’s a match made in bourbon.
The starting point is our Shining Cliff Spiced Gin, vapour distilled here at White Peak Distillery, from 11 botanicals including wild juniper, marjoram, cardamom, cassia, meadowsweet and orris. We then created a deliciously warming gin by carefully ageing in an oak ex-bourbon cask (imported by us from Heaven Hills Distillery, Kentucky, USA). The earthy flavours of our Spiced Gin are complimented beautifully by the smoky, woody notes imparted from the oak maturation. Perfect for an English winter’s day.
here is a spicy and warm depth of flavour that makes this perfect for sipping neat over ice in front of a roaring fire. We also love it paired with a premium Indian tonic (full fat or skinny) and garnished with a slice of orange or fresh ginger.
